Vegan Blueberry Bread


No dairy, no eggs. This delish blueberry bread uses soy or almond milk (your choice) with lemon juice to keep it moist rather than milk and vinegar. Agave nectar is used to sweeten up the bread instead of sugar. Healthy and packed with antioxidants. Did you know that blueberries have more antioxidants than any other fruits? Antioxidants are essential to maintaining healthy immune system. Blueberries are also rich in manganese which is important for bone development. Other health benefits of blueberries include:

- heart health
- eyes health
- inhibit cancer growth
- lowers blood sugar

Here's what you need to make the vegan blueberry bread:

3 large over-ripe bananas
2 tablespoons lemon juice
1/3 cup of your choice of soymilk, almond milk, or apple sauce -- whichever flavor you prefer
1/2 cup agave nectar,
2 cups whole wheat flour or (I went the gluten-free route for my recipe and used 1 1/2 cups Multi-Blend Flour from Authentic Foods, a cup-for-cup style gluten-free flour blend. Works perfectly.)
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1 1/2 cups blueberries
